My trusty list of quick, nutritional meals

Spaghetti Squash Lasagna

Ingredients: 

One Yellow Spaghetti Squash (cook and scrape out the squash)

Large jar of your favorite spaghetti sauce 

3 eggs

One small can of tomato paste 

1 lb. fresh ground chuck or turkey (browned and drained)

16 oz. Ricotta Cheese 

16 oz. cottage cheese

16. oz mozzarella 

Good coat of parmesan 

Directions: 

Scramble the 3 eggs, mix into the drained squash (this takes away the watery-ness)

Layer topping with sauce and a sprinkle of parmesan.

Bake at 350 for one hour.

Cool and enjoy. 🙂 

 

 

The Best Fajita Stir Fry

Ingredients: 

1 Large Ribeye steak cut into small strips (I leave the fat on)

1 Green Bell pepper, cut into strips

1 Red Bell pepper, cut into strips

1/4 chopped (sweet) Vidalia Onion 

1/2 teaspoon Garlic Salt 

1/2 teaspoon chili powder

3 Tbs. of refined coconut oil

Tortillas (low-carb taste just as good) 

1 tsp butter

Directions:

Put strips of ribeye in coconut oil, stir fry until partially cooked. 

Add vegetables, cook until just slightly tender.

In a separate skillet , lightly toast the tortillas in butter.

Fill your tortillas and enjoy. Top with queso fresco.
